Thai Peanut Curry with Roasted Vegetables and Rice Noodles

So goodIt's hard enough finding good Thai food in the city let alone when you're squatting around a campfire in the middle of nowhere. Pinnacle has done it though. This Thai curry is one of the most delicious camp meals I've ever had. Creamy and rich combined with real vegetables (broccoli, edamame, peppers and onions oh my!). I do wish the noodles were a bit more substantial but that does not diminish the down-right awesomeness of this meal. Spice level was 1.5 out of 5 stars (e.g., not spicy). Looking forward to trying other Pinnacle meals!
